Joy of Baking

The Joy of Baking is…

When you emerge triumphant from the supermarket after purchasing all the ingredients.

 

When you enjoy the therapeutic process of mixing and blending the ingredients.

 

When you savour the wonderful smell as the cake bakes.

 

When you can smile and share a good laugh even though you got scaled by the hot oven.

 

When you can play a round of monopoly with your friends while the cake is being baked.

 

When you feel the sense of accomplishment when the cake is finally completed.

 

When you relish the appreciative murmurs of eager tasters.

 

When the power of 3 come together to bake delicious cakes.

Oreo Chilled Cheesecake

The power of 3 (Me, Dearie and Gavin) experimented with this cake on 16th July.

We’re baking it again for a birthday celebration on 21st July.

Ingredients

  1. 4x 250 grams Philadelphia light cream cheese
  2. 8x 150 grams Oreo cookies, cream removed
  3. 12x Oreo mini cookies
  4. 1 block of butter, melted
  5. 1 teaspoon vanilla essence
  6. 1/2 cup caster sugar

Crust

  1. Line 13×9 inch pan with aluminum foil, with ends of foil extending over sides of pan.
  2. Coarsely chop 4 packets of the cookies, set aside for filling.
  3. Finely crush remaining cookies; mix with butter. Press firmly onto bottom of prepared pan.
  4. Refrigerate while preparing filling.

Filling

  1. Beat cream cheese, sugar and vanilla in large bowl with electric mixer until well blended.
  2. Gently stir in chopped cookies.
  3. Spoon fillings over crust.
  4. Decorate top with oreo mini cookies
  5. Refrigerate 4 hours or until firm. Store leftover cheesecake in refrigerator.


Final product completed and sent to the freezer at 1.30am.

Hopefully the cake turns out fine for the birthday.
